the pitaya is the edible fruit of Hylocereus undatus, a vining, epiphytic cactus with giant flowers that open at dusk. Originally from Central America, pitaya is now heavily cultivated in South East Asia, where the scaly, hot-pink fruit is also known as dragonfruit.
